How To Cook Spanish Chicken and Rice

Take a large bowl for making Spanish season making. Whisk together all the ingredients like 1 teaspoon garlic powder, 1/4 teaspoon Italian seasoning, 1 teaspoon salt, 2 teaspoons smoked paprika, 1 teaspoons ground cumin, Some Coriander and 1 teaspoon chili powder in it. Divide the mixture and separate half of this mixture aside. Now divide the lemon into 2 halves and squeeze it over the half separated mixture. Reserve the left half portion of lemon for squeezing it on the recipe while cooking.

Take a medium bowl and place chicken pieces in it. Drizzle the chicken with seasoned oil and toss the chicken well to coat it in the oil. Add half of the mixed seasoning which was separated aside in the chicken and mix it well so that the chicken is coated well with seasoning.

In a large skillet add 1 tablespoon of oil in it. Now add seasoned chicken in the skillet. Cook the chicken on medium heat and cook it for 2-3 minutes until chicken changes its color to brown. Transfer the chicken into the plate.

Take a separate pan and add rice, chicken broth, 1/2 tablespoon lemon juice and the remaining seasoning mixture in it. Mix rice well with help of spatula.
