Ho to Cook Chicken Curry And Rice

Take a deep dish pan and make sure that deep skillet has cover lid with it. Place oil in the pan and heat it at medium range. Now add chicken, bell peppers and onions in the pan. Sauté the ingredients well for 1 minute.

Sprinkle 1 tablespoon of curry powder and 1/2 tablespoon of salt over the ingredients in pan and mix it well for longer than 1 minute till it turns golden brown from outside. (At this point chicken is not cooked thoroughly) still transfer the chicken to the plate and cover them to keep it warm. In the same pan combine together rice, broth water, water, salt, sugar and remaining 2 teaspoon of curry powder. Stir them well.

Bring the mixture to boil than reduce the heat to high simmer. Cover the pan and cook for 15 minutes. Uncover the pan and transfer the chicken to the pan (Make sure that you will not stir at this point. Just make single layers on the top of the rice so that it will not heaped in the center of the pan). Cover the pan again and cook for longer 10 minutes.

Uncover, stir in coconut milk and salt according to your taste. If you like fresh herbs than garnish it with them and Serve immediately.

Ingredients

  • 1 cup water
  • 1 bell pepper red or green (Chop them properly)
  • 2 cups chicken broth
  • 1 onion white or yellow (Chop the onion properly)
  • 1-tablespoon oil
  • 1 cup coconut milk
  • 1/2 teaspoon sugar
  • 1 tablespoon curry powder + 2 teaspoons divided
  • fresh cilantro or basil for garnish
  • 1 teaspoon salt (Divide the salt in two sections)
  • 1.5 pounds boneless skinless chicken breasts (If chicken is not available you can use chicken thighs as well)
  • 1 cup white rice (I prefer you to use basmati rice)

Notes/Tips

  • You can use fresh vegetables in this recipe but if fresh vegetables are not available than you can use canned vegetables as well.
  • The amount of stock uses depends on the rice used. If the rice is hard than add more stock in it but there is hardly any liquid left in the pan.
  • If you want browned chicken than you can sauté the chicken in the start of recipe. Transfer it to the plate when cooked fully and cover them to keep it warm till the end.
