How to cook Cheesy Meatless Manicotti

Take a large bowl and add 4-5 cups of water in it. Bring the water of 4-5 cups to boil in large bowl. Add manicotti shells in water and continue to boil 10-12 minutes or until the shells are tender and can be bend easily. Take care that these shell do no cook completely. the shape of shells should be hold so that it can be fill easily.

Pre heat the oven at temperature of 350 degree. Spray a dish of 9 x 13 inch with some casserole oil or the baking dish with with some cooking spray. Take a large bowl and mix together cottage cheese, Spanish, 2 cups mozzarella, parmesan cheese, basil, oregano, pepper, salt, and garlic powder. Use a hand mixer to mix thee ingredients. Mix for 2-3 minutes or until all the ingredients are incorporated well.

Pour 2/3 of sauce into prepared baking dish. Use a spoon to fill the manicotti shells with 2-3 spoons of filling. Lay stuffed shells side by side in the baking dish. Add 1/4 of water in he dish. Cover shells with the remaining sauce and top it with the remaining mozzarella cheese.

Bake uncovered dish for about 30 minutes or the shells are completely cooked, cheese melts fully and filling is hot. Serve it hot and top with fresh basil.

  • 2 cups fresh spinach leaves
  • 1/4 teaspoon garlic powder
  • 2-1/2 cups mozzarella cheese 
  • 1/4 cup grated parmesan cheese
  • 1/2 teaspoon dried basil (You can use fresh basil as well)
  • 1/4 teaspoon pepper
  • 1-1/2 teaspoons dried oregano
  • 1/4 teaspoon salt
  • 1 large jar light tomato basil sauce (1 large is equivalent to 3 cups)
  • 1/3 cup water
