How To Make Mexican Tortilla Soup

Take a deep pan and place it on the stovetop and turn the flame on. Cook the soup on medium range flame. Add some olive oil in the pan and heat the oil. Add onions, garlic, jalapenos, and tomatoes in the pan and cook until the vegetables are tender and soft enough. Now add salt and black pepper according to you taste and simmer properly.

Now prepare chicken stock by cutting chicken into fine pieces on cutting board. Add chicken in the pan with water in the pan and add some salt and black pepper in it. Bring it to boil for 10-15 minutes until chicken is cook fully. When the chicken is cook properly pour the water in separate container and separate the chicken.

Add tis chicken and stock in the pan and cook for 3 minutes. Meanwhile heat oil in separate pan and deep fry the tortilla strips in it until they are golden crisp, Place them in plate and sprinkle some salt on it. Serve the Mexican Tortilla Soup in bowls and serve them with tortilla strips.

Mexican Tortilla Soup

Mexican Tortilla Soup is best dish for winters which is healthy as well as good in taste too. Prepare in very short time and can be serve with tortilla strips and fish crackers as well.

Ingredients

  • 2 boneless chicken breast
  • 2-teaspoons chili powder
  • 1-teaspoon garlic powder
  • 2-teaspoons cumin
  • 1-teaspoon brown sugar
  • Salt according to taste
  • Black pepper according to taste
  • 2-tablespoons olive oil
  • 2 ears of corn on the cob
  • 8 cups chicken broth
  • 1 and 15-ounce can black beans
  • 2 tablespoon Lemon water
  • 1  onion medium
  • 1-2 jalapenos
  • 3 teaspoons garlic
  • 1 bunch cilantro
  • Tortilla strips

Directions

1- Cut the chicken into1/2 inch slices on cutting board. Add 1/2 teaspoon chili powder, 1/2 teaspoon garlic powder, 1/2 teaspoon cumin, and brown sugar in the chicken cut into slices. Now drizzle some olive oil on the chicken and mix together. Add some spices, salt and black pepper according to your taste. If you want your soup to be spicy than add some more spices in it. After margination place the chicken on grill and cook it for 5-6 minutes on medium flame. change the side of chicken after 2 minutes to make sure chicken is cook fully. Dice the chicken and set aside.

2- If you don’t have time to grill the chicken than you can make chicken stock as well. It is prepare in few times. Place chicken in deep pan and add water and chicken in it. Bring it to boil and boil it for 7-9 minutes. When chicken is cook fully pour the water in container and set chicken aside.

3- Meanwhile when chicken is on grill or chicken stock is preparing, rub the corn with oil and season it with some pepper and salt. Grill it for 5 minutes on medium heat. If you do not want to grill than boil the corn for 10 minutes in enough water.

4- Take a separate large bowl and add the remaining vegetables like jalapenos, beans,  diced tomatoes and green chilis, fire roasted tomatoes, chicken broth and grill corn in it.

5- Bring the mixture to boil and cook for 10 minutes until all the ingredients are settle down. Simmer it constantly to have a smooth texture. Stir in chicken, salt and pepper according to your taste in it and serve with your favorite sides.

Tips/Notes

  • If you want to have less calories Mexican Tortilla Soup than use skinless chicken, it will reduce more calories. If you have chicken with skin than you don’t need to take some tension as the calories on the skin of chicken is of unsaturated variety.
  • You can have this soup for Whole30 diet than use grill method to cook chicken. In grill method we use no oil either or use some drops of oil which will helps in maintaining low carbs.
  • You can make this Mexican Tortilla Soup for vegan too. Just replace chicken with some fresh and healthy vegetables.
  • Do not refrigerate the soup for nest time use. It may cause some health issue by using preserve soup.
