How Do You Prepare Chicken For this

If you want your chicken to be moist and tender from inside than you need to brine the chicken before preparing it. You can use Brine Chicken Thighs recipe to brine the chicken. This recipe is so simple and easy. Just follow the step and brine the chicken to have delicious taste.

Brine the chicken with water, some herbs, salt and pepper. Brine it for 4 hours. This time is enough for brining but you can brine it over night too. Brining chicken for 4 hours is enough too. After brining the chicken for mentioned time now the chicken is ready to marinate.

Marinate the Chicken after brining and grill it on medium range. Do not over cook the chicken otherwise it will hard the chicken. Grill it on medium flame<, i recommend you to maintain temperature of 165 degree F. After brining the chicken it will take approximately 10 minutes to prepare the Chicken Margherita. Keep the prepare chicken aside until all the sidings are prepared too.

How To Make Chicken Margherita

Pre heat your grill to 400-425 degree if you are making this chicken on grill. If you are using stovetop than pre heat the grill pan. After that take a brush and dip it in the oil and rub it one the grill grates or in grill pan. By placing oil in the grill will help in preventing sticking.

Marinate the chicken before cooking if you have enough time. This step will makes chicken more tender and juicy from inside. Take chicken/ meat fillets with medium thickness. If you take more thick fillets than the chicken my remain un cook from inside. Sprinkle the chicken with salt, pepper and garlic powder.

Place the chicken on grill and cook for 5 minutes. After 5 minutes change the side of chicken and cook from this side. Cook fully on both sides and when the chicken is cooked fully, move it to the plate. Now its time to assemble the chicken. Place the grill chicken, than add mozzarella over it, add pesto and garnish it with sweet tomato sauce and garlic sauce.

Some Extra Tips

  • If the chicken is refrigerated, than make sure to move the chicken out before 15 minutes so that chicken cooks fully from inside.
  • If you want your chicken to more tender and juicy than brine it before marinating it.
  • You can use store-bought pesto sauce as well. But If you have extra five minutes than I would recommend you to make this pesto sauce at home.
  • After placing the cheese slice on the chicken cover the grill with lid so that cheese melts faster.

Chicken Margherita

Ingredients

  • 4 boneless skinless chicken breasts
  • Salt according to your taste
  • Pepper according to your taste
  • 2-tablespoons olive oil
  • 1-teaspoon garlic powder
  • 1-teaspoon Italian seasoning
  • 4 slices mozzarella cheese
  • 1/2 cup basil pesto
  • 1/2 cup cherry tomatoes
  • 1 tablespoon fresh lemon juice
  • 1/2 cup packed basil leaves
  • Cracked/Crushed black pepper

Instructions

1- Take large bowl and add chicken pieces, salt, pepper, Italian seasoning and olive oil in it and mix it well. If you have no Italian seasoning than use 1/2 teaspoon dried oregano + 1/4 teaspoon dried basil + 1/4 teaspoon dried thyme.

2- Grill the chicken on the grill for about 10-12 minutes. Cook one side for about 6-7 minutes and than turn the side to cook it from other side. Make sure to cook chicken on medium range. Move the cook chicken in the plate and top with slice of Mozzarella and cook for 1 minute to melt the cheese.

3- Toss tomatoes, lemon juice and pesto together. Place three tablespoon of pesto sauce over chicken and some freshly crush black pepper over it.

4- For pesto sauce add 1 cup packed basil leaves,1 tablespoon garlic, 1/3 cup olive oil, 1/3 cup shredded parmesan cheese, 1/2 teaspoon salt, 1/4 teaspoon black pepper and 1/2 teaspoon fresh lemon juice to a food processor or blender. Pulse until smooth. Serve immediately or cover and store chilled.
