Ingredients

  • 4 to 5 cups all-purpose flour
  • 1/3 cup sugar
  • 3 tablespoons cocoa powder
  • 2 packets Yeast
  • 1 teaspoon salt
  • 1 and 1/2 cups water
  • 6 tablespoons butter
  • 1 egg
  • 2-3 teaspoons red food coloring

Filling

  • 1/3 cup sugar
  • 1 tablespoon cocoa powder
  • 2 teaspoons ground cinnamon
  • 5 tablespoons butter

Frosting

  • 6 tablespoons butter
  • 4 ounces cream cheese
  • 2 teaspoons vanilla extract
  • 3-5 cups powdered sugar
  • 3-6 tablespoons heavy cream or milk

Directions

1- Take a large bowl and add in it flour, sugar, coca powder, yeast and salt. Add dry yeast in the bowl. Do not add mixture of yeast and water. Stir all the ingredients well until a smooth mixture is formed. Now place water and butter in small bowl and place it in the microwave oven. Microwave them for about 15 minutes on high temperature. Make sure that the butter and water mixture is medium hot not super hot. Add this hot mixture of butter and water in the dry ingredients in large bowl.

2- Add red food coloring and eggs in the mixture. Beat them well at medium speed until smooth mixture forms. Add 1 cup flour; beat the mixture for about 2 minutes. Now add the remaining flour to makes the mixture a good ball.

3- Knead on lightly floured surface until smooth and elastic and dough springs back when lightly pressed with 2 fingers, about 6 to 8 minutes. Cover with a towel; let rest for 10 minutes.

4- For filling the rolls, combine sugar, coca powder and cinnamon in separate bowl. Set them aside.

5- Take a rolling pin and roll the dough into15 x 10 inch rectangular pieces. Spread 5 tablespoon butter over the dough and stopping at least 1/2 inch from the edges on sides. Sprinkle it with sugar and cinnamon mixture. Beginning from the long end of the rectangle, roll it up tightly. Pinch seams to seal. Cut it into 12 equal pieces. ( Here is some tip for rolling the rolls; Use unflavored dental floss instead of a knife to cut rolls. To do this, cut a piece of floss about 12 inches long. Slide floss under the roll; bring the ends up and cross over to cut each slice).

6- Place the cut sides of the rolls on down side of the baking tray. Cover them with towel and let them rise in warm place until it becomes double in size. It will take 30 minutes or less.

7- Pre heat the oven at 350 degree F. Bake the rolls in pre heated oven for 25-30 minutes or until rolls turn into golden brown in color. Allow the rolls to cool down and prepare frosting in remaining time.

8- Take a small sauce pan and melt butter in it at medium range. When the butter is melted fully heat it for more 3-4 minutes until the color changes from yellow to golden brown. Remove it from heat than.

9- Take large bowl and mix cream cheese, vanilla, butter and mix them well. Mix in 1 cup powdered sugar until it becomes thick in texture. Add 1 spoon milk in the frosting at time until it becomes very thick. Spread the frosting over cinnamon rolls and top with sprinkles.

Notes/Tips

  • The quick tip about Red Velvet Cinnamon Rolls is that you can vary considerably in their moist content. If the Cinnamon is fresh and brought from garden than they have moist texture. Suppose if the cinnamon is out of season than the rolls have dry texture.
  • If you use both walnuts and dry fruits than the batter is increase, more rolls can be prepare from same batter.
  • I recommend you to use butter instead of oil because butter gives more butter flavor and moist texture instead of oil.
