  • 1 large Onion, diced
  • 2 medium Carrots, diced
  • 2 Celery stalks, diced
  • 4 cloves Garlic cloves, minced
  • 4 cups (packed) Kale, stems removed and chopped
  • 2 cans (15 oz each) White beans (cannellini), drained
  • 6 cups Vegetable broth
  • 1 can (14 oz) Diced tomatoes
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried oregano
  • 1 Bay leaf
  • 1 teaspoon (or to taste) Salt
  • 1/2 teaspoon Black pepper
  • 1/4 teaspoon (optional) Red pepper flakes
  • 2 tablespoons Lemon juice
  • 2 tablespoons Fresh parsley, chopped

Instructions

    Heat olive oil in a large pot or Dutch oven over medium heat.

    Add diced onion, carrots, and celery. Sauté for 5-7 minutes until vegetables are softened and onion is translucent.

    Add minced garlic and cook for 1 minute until fragrant, stirring constantly to prevent burning.

    Add dried thyme, oregano, salt, black pepper, and red pepper flakes if using. Stir to coat the vegetables with spices.

    Pour in vegetable broth and diced tomatoes with their juice. Stir well.
