Cut the beef into medium slices and than place it in large bowl. Add some oil in the bowl and mix it well. Now season the beef with salt and black pepper. Toss to mix the salt and pepper with beef slices. Stir together cumin, chili powder, garlic powder, and onion powder. Sprinkle the ingredients over the beef and again toss to mix all the ingredients. Set the pressure cooker to sauté and drizzle it with 2 table spoon of vegetable oil.

Use the tongs to sear the beef into the pot. Sear one side for 2-3 minutes and than turn the side and sear it for 1-2 minutes more. Remove beef from the pot and than add some broth in the pot. Again place the meat in the pot. Cover, seal and set the pot to the manual settings or the pressure cooker for about 30-35 minutes.

Pre heat the over to 450 degree and take a baking tray or casserole dish. Spread 1 cup Enchiladas sauce in the bottom of baking pan. Let the pressure in cooker release naturally and do nothing for 15 minutes. Turn the vent and allow it depressurize completely until float valves drops. Remove the cover of pressure cooker and take the beef out and shred it with folk properly.

Take tortillas and fill these tortillas with beef and with shredded cheese. If you do not like tortillas available in market than you can make tortillas at home too. Roll the tortillas after adding beef and cheese in it and place them together in the prepared baking tray. Pour the remaining enchilada sauce over the enchiladas and then top it with the shredded cheese left.

  • 2.5-3 pounds beef chuck (Cut into fine slices)
  • 4 tablespoons oil (Divide into sections)
  • 2 teaspoons chili powder
  • Salt according to taste.
  • 2 teaspoons cumin
  • 1 cup beef broth
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder

for the enchiladas

  • 30 ounces red enchilada sauce
  • 8-10 fajita-size flour tortillas
  • 3 cups shredded Mexican blend cheese
  • Cilantro, avocado, tomatoes, onions, sour cream, olives or any other kind of favorite toppings

Notes/Tips

  • Sear the beef properly before adding it in the slow cooker. Cook for 2 hours on medium flame and cook for 4-5 hours if cook on low flame.
  • If you want some real spices in this recipe than add 1 table spoon of adobe sauce  from a can of chipotle peppers packed in adobo sauce. This sauce is available in almost all kinds of grocery stores. You can bought the sauce from grocery stores.
  • You can move the beef into a separate bowl and than shred it in pieces. If you want to save time than you can just simply shred it in the pressure cooker without moving it in another plate or bowl.
  • This roast can be cook in 30 minutes if you cook it in pressure cooker on medium heat. If you have plenty of time than you can have this roast more juicer and tender by cooking it on low flame for about 40-45 minutes.
