DO I HAVE TO LEAVE THE POTATO SKIN ON?

If you love the skin of potato than you can use potatoes with skin too. In this recipe I use potatoes by peeling the skin off. The Avocado Potato Salad tastes remains same while adding the potatoes with skin or without skin. Take large potatoes because you do not need to peel more skin for peeling. If you take small potatoes than you have to peel skin of all potatoes and it will take a lot of time. SO, consume the time by taking large size potatoes and peel them in a go.

Avocado Potato Salad

Ingredients

  • 3 pounds potatoes (Divided into pieces)
  • 1/2 small red onion (Dice into pieces)
  • 3 celery stalks (Chop properly)
  • 6 hard boiled eggs (Chop roughly)
  • 3 green onions (Dice into pieces)
  • 2 avocados 
  • 4 slices of bacon (Cooked properly and than chopped)

Dressing

  • 1 cup mayo (You can use light mayo too)
  • 1/2 cup plain Greek yogurt 
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • Salt according to taste
  • Black pepper according to taste
  • 1/4 teaspoon smoked paprika 

Directions

1- Risen the potatoes with normal water. Take a pot and add potatoes in it. Ass water in same pot and cover it with lid. Boil the potatoes for 5-6 minutes. Check the potatoes and turn the flame off when the potatoes become folk tender. Strain the potatoes and run cold water over the potatoes Set the potatoes aside to let them dry slightly. Once the liquid has drained, place potatoes in large bowl.

2- Add celery, green onions, red onions, eggs, avocados and bacon to the bowl.

3- Whisk together mayo, Greek yogurt, vinegar, mustard, garlic powder, salt and pepper, and paprika. Pour these mixture of ingredients over the potatoes and stir gently to combine everything.

4- Cover and chill for at least one hour. You can store upto 8 hours in refrigerator too.

Notes/Tips

If you want to serve the Avocado Potato Salad after 1 hour than do not add the avocado. If you add the avocado it may turns brown in color. To avoid this add anaconda in the end before serving.
